چکیده
Dill (Anethum graveolens L.) is an aromatic annual plant with strong medicinal properties, belonging to the Apiaceae family, and is widely cultivated in Iran and globally. This study focused on the phytochemical diversity of dill ecotypes from Arak, Jahrom, Malayer, Jolfa, and Kashmar to examine essential oil quantity and quality. Seeds from the studied ecotypes were collected, and their germination rates were determined. They were then cultivated and grown to the full flowering stage. At full bloom, the plant organs were harvested and dried in the shade. Essential oils were extracted using water distillation with a Clevenger apparatus, and the yield was calculated. The highest essential oil yield (0.34%) was obtained from the Kashmar accession, while the lowest (0.06%) was from the Arak accession. GC/MS analysis identified 71 compounds across the five ecotypes: 26 from Arak, 34 from Malayer, 26 from Jahrom, 42 from Jolfa, and 37 from Kashmar. Santolina triene had the highest concentration (0.591%) in the Jahrom accession, while cineole had the lowest (0.016%) in the Malayer accession. Compounds consistently present included α-phellandrene, D-limonene, limonene, p-cymenene, carvone, dihydrocarvone, trans-dihydrocarvone, dihydrocarveol, piperitenone oxide, myristicin, elemicin, apiol, and oleic acid. These findings provide valuable insights for conserving Iranian dill germplasm and for introducing these ecotypes to the food, pharmaceutical, and cosmetic industries.

Introduction
The increasing demand for healthy and safe food products, driven by their impact on human health and environmental considerations is a significant concern. This is especially important for medicinal-edible plants that are directly related to human health (Rostaei et al., 2018). The climatic diversity of Iran has created unique natural habitats for medicinal plants, leading to a wide variety of these plants (Sarabi & Sefidkon, 2017; Nikrouz-Gharamaleki et al., 2019). Sustainable exploitation and conservation of these plants require awareness and management of their natural diversity. Dill (Anethum graveolens L.) is an edible-medicinal plant with essential oil that finds applications in various industries due to its valuable secondary metabolites (Setayesh-Mehr & Ganjeali. 2013; Pakravan et al., 2016). The reported medicinal effects of dill include anticancer, antifungal, antioxidant, antibacterial, cardioprotective, anti-diabetic, kidney protective, antidepressant, anti-inflammatory, analgesic, protective and antisecretory effects on gastric mucosa, increased progesterone concentration, and anti-diarrheal properties. This study examined the native ecotypes of dill from different regions of Iran and their phytochemical diversity in terms of essential oil to determine their variability in the quantity and quality of the extracted compounds. The results can be effective in the identification, management, and conservation of the natural germplasm of dill, and the selected ecotypes can be used in modern agricultural systems.
 
Materials & Methods
Fifty grams of dried samples of each variety were used for essential oil extraction using a Clevenger apparatus. To separate, identify, and quantify the compounds present in the extracted essential oil, a GC/MS device was utilized. Following preparation, 1 microliter of essential oil from each sample was injected into the device to determine the types of compounds present. After separation, the percentage of the essential oil components was calculated using the retention index. Finally, the proposed compounds were downloaded from the computer library connected to the device in separate files and compared with standard compounds from reputable sources (Adams, 1995; NIST WebBook). The gas chromatography device, equipped with a spectrophotometer detector, was manufactured by Agilent, USA. It featured the Agilent 7890B Series GC and Agilent 5977 Series MSD, which supports liquid sample injection with a Split/Splitless Inlet dilution. Additionally, the device offers the capability to perform qualitative and quantitative identification using a mass spectrometer detector (MSD).
 
Research Findings
The results of this study showed that the essential oil yield of the ecotypes varied from 0.06% to 0.34%. There were differences among the evaluated ecotypes in terms of the quantity and type of compounds. In total, 71 compounds were identified across the five ecotypes, with the highest amount (0.591%) related to Santolina triene in the Jahrom ecotype, and the lowest amount (0.016%) related to Cineole in the Malayer ecotype. Of the 71 identified compounds, 13 compounds—α-phellandrene, D-limonene, limonene, p-cymenene, carvone, dihydrocarvone, trans-dihydrocarvone, dihydrocarveol, piperitenone oxide, myristicin, elemicin, apiol, and oleic acid—were produced in all ecotypes in varying amounts. Among these 13 compounds, the first eight are cyclic monoterpenoids, and piperitenone oxide is biosynthesized through the methylerythritol phosphate (MEP) pathway in the plastid.
 
Discussion of Results & Conclusion
The yield of essential oil can be affected by environmental, genetic, and plant organ factors. When examining the impact of plant genetics on essential oil yield, a study on the essential oil of different ecotypes of dill reported that the essential oil content varies from 0.22% to 0.46% across ecotypes (Mohebodini and Farmanpour-Kalagh, 2021). This finding is consistent with the results of this study, which also observed variability in essential oil content among different ecotypes. Given that the ecotypes studied were collected from different regions of the country but cultivated under the same climatic conditions, the phytochemical diversity of the essential oil-based ecotypes showed significant differences in terms of yield and constituent compounds. Across all ecotypes, 13 compounds were produced, but their amounts varied among the five ecotypes. The compounds dihydrocarvone, trans-dihydrocarvone, carvone, elemicin, and apiol were identified as the dominant compounds in these ecotypes. These differences can be attributed to the genetic potential of the studied ecotypes under the climatic conditions of the cultivation site. This genetic potential has facilitated the production of various monoterpenoid and phenylpropanoid compounds. Thus, the information obtained from this study can be useful and effective in identifying and introducing specific ecotypes for the extraction and production of valuable compounds for the food and pharmaceutical industries.

مقدمه

امروزه تقاضا برای محصولات غذایی سالم و ایمن به‌دلیل تأثیر بر سلامت جوامع بشری و ملاحظات زیست‌محیطی رو به افزایش است و این امر دربارة گیاهانی که به‌عنوان گیاه دارویی - خوراکی تلقی شده است و به‌طور مستقیم با سلامت انسان سروکار دارند، از اهمیت بیشتری برخوردار است (Rostaei et al., 2018). تنوع آب‌وهوایی و اقلیمی ایران منجر به ایجاد رویشگا‌های طبیعی منحصربه‌فردی از گیاهان دارویی شده و تنوع گسترده‌ای از این گیاهان را به وجود آورده است (Sarabi & Sefidkon, 2017; Nikrouz-Gharamaleki et al., 2019). ضرورت بهره‌برداری پایدار و حفاظت از ذخایر ژنتیکی این گیاهان، آگاهی‌یافتن و مدیریت تنوع طبیعی موجود در بین گونه‌های متنوع گیاهان دارویی است که نقش بسیار مهمی در برنامه‌ریزی‌های هدف‌دار برای حفاظت، بهبود، اصلاح، اهل‌‌سازی و معرفی گونه‌های مذکور به سیستم‌های کشاورزی دارد؛ بنابراین، لازم است با شناسایی گونه‌های متنوع و دستیابی به اطلاعات لازم دربارة خصوصیات فیتوشیمیایی، گام‌های اساسی در استفاده از اسا‌نس‌های گیاهی و اهلی‌سازی براساس این تنوع برداشته شود (Hadi et al., 2018; Raeisi Monfared et al., 2019). شوید (Anethum graveolens L.) یکی از گیاهان خوراکی - دارویی است که تقریبا تمام پیکره‌ آن حاوی اسانس است و می‌توان به‌منظور اهداف ذکرشده از تنوع فیتوشیمیایی آن بهره برد. این گیاه به‌صورت یک‌ساله و معطر از تیره‌ چتریان (Apiaceae) بوده و بومی جنوب غربی و آسیای مرکزی است (Setayesh-Mehr & Ganjeali. 2013; Pakravan et al., 2016). شوید با داشتن متابولیت‌های ثانویه ارزشمند (شکل 1) کاربردهای فراوانی در صنایع مختلف دارد. به‌طور کلی از برگ‌ها و بذر آن در تهیه‌ ادویه‌ها، چاشنی‌ها و سایر فرآورد‌ه‌های غذایی، آرایشی و بهداشتی استفاده می‌شود (Kamkar, 2009). از اثرات دارویی گزارش‌شده آن می‌توان به ضدسرطان (Gomaa et al., 2020)، ضدقارچ (Hernández-Cánovas et al., 2020)، آنتی‌اکسیدان (Li et al., 2018)، ضدباکتری (Alamdari-Palangi et al., 2020)، ضدبیماری‌های قلبی - عروقی (Mohammed et al., 2019)، ضددیابت (Haidari et al., 2020)، محافظت از کلیه (Srivastava et al., 2018)، ضدافسردگی (El Mansouri et al., 2016)، ضدالتهاب (Kazemi, 2015)، ضددرد (Rezaee-Asl et al., 2013)، اثرات محافظتی و ضدترشحی مخاط معده، افزایش غلظت پروژسترون (Al-Snafi, 2014)، ضداسهال (Salih Sahib et al., 2014) و غیره اشاره کرد. ازلحاظ طب سنتی نیز این گیاه عمدتاً برای رفع سرفه، مشکلات ادراری، سرماخوردگی، نفخ، اسپاسم، تشنج و درد معده استفاده می‌شود (Ghasemi, 2005). در حالت کلی، با داشتن انواع متنوعی از اثرات دارویی می‌توان گیاه شوید را در زمره‌ گیاهان دارویی پرکاربرد قرار داد و توده‌های بومی آن را ازلحاظ تنوع فیتوشیمیایی بررسی کرد. در بررسی تنوع فیتوشیمیایی علاوه بر ژنتیک (Solouki et al., 2012; Suresh et al., 2013; Farmanpour-Kalalagh et al., 2020) باید توجه داشت وجود ترکیبات مختلف و ساختارهای شیمیایی مختلف می‌تواند به‌دلیل محل رشد گیاه (Zarandi & Sistani, 2023)، نوع خاک، آب‌‌وهوا، نور (Dehghani et al., 2024)، محتوای آب، زمان برداشت، مرحله رشد گیاه، فیزیولوژی پس از برداشت، اندام گیاهی، کودهای اعمال‌شده (Baghbani Arani & Adavi, 2021; Ghassemi-Golezani & Solhi-Khajemarjan, 2021)  و غیره باشد.

در این مطالعه توده‌های بومی شوید از نقاط مختلف ایران، جمع‌آوری و تنوع فیتوشیمیایی آنها ازلحاظ اسانس بررسی شده‌اند تا تنوع آنها ازلحاظ کمّی و کیفیِ ترکیبات استحصال‌شده‌ مشخص شود. نتایج حاصل از این مطالعه می‌توانند در شناسایی، مدیریت و حفاظت از ژرم‌پلاسم بومی شوید مؤثر باشند و تود‌ه‌های منتخب در سیستم کشاورزی مدرن استفاده شوند.

مواد و روش‌‌ها

کاشت، داشت، برداشت و استخراج اسانس از توده‌ها

بذور پنج توده شوید ایرانی از اراک، جهرم، ملایر، جلفا و کاشمر، جمع‌آوری (جدول 1) و در مزرعه تحقیقاتی دانشکده کشاورزی دانشگاه محقق اردبیلی در استان اردبیل در خاکی با ds/m 38/2EC= و 85/6pH= در اوایل خرداد کشت شدند. بعد از جوانه‌زدن گیاهچه‌ها، عمل تنک‌کردن بعد از دو هفته و آبیاری نیز 3-2 بار در هفته صورت گرفت. در حین رشد گیاهان وجین‌کردن علف‌های هرز هم‌زمان با رشدشان انجام شد. پس از رسیدن توده‌های مختلف شوید به مرحله تمام گل (شکل 2) تقریباً در اوایل مرداد ماه، برداشت آنها آغاز شد و اندام‌های هوایی گیاه، چیده و در پاکت‌های مخصوص قرار داده شدند؛ به‌طوری‌که در هر پاکت نمونه مربوط به هر توده گذاشته شد. درنهایت، نمونه‌ها در دمای محیط و در سایه بدون تابش نور خورشید برای خشک‌کردن قرار گرفتند. نمونه خشک‌شده هرکدام از توده‌های مختلف شوید به مقدار 50 گرم با ترازوی دیجیتالی توزین شد و در ارلن 1000 میلی‌لیتری، ریخته و ده برابر وزن خشک نمونه، آب مقطر به آن اضافه شد (500 میلی‌لیتر). ارلن از پایین به دستگاه کلونجر، وصل و جریان آب برای دستگاه کلونجر باز شد. سپس هیتر روشن شد و در زیر ارلنِ متصل‌شده به دستگاه قرار گرفت تا حرارت را به ارلن انتقال دهد. عمل اسانس‌گیری به مدت 2 ساعت، انجام و بعد از آن زمان جریان آب متصل به دستگاه و حرارت قطع شد تا اسانس استحصال‌شده جمع شود (Madandoust & Fooladchang, 2018). اسانس جمع‌آوری‌شده در فلاسک‌ها یا ظروف کوچک شیشه‌ای ریخته شد و دور آن سلفون، پیچیده و سپس در فویل آلومینیومی پیچیده و در یخچال قرار داده شد تا سریعاً آنالیز اسانس صورت گیرد (Farmanpour Kalalagh et al., 2023).

نحوه جداسازی و شناسایی ترکیبات فرار

به‌منظور جداسازی، شناسایی و مشخص‌کردن ترکیبات موجود در اسانس استحصال‌شده، از دستگاه  GC/MSاستفاده شد. اسانس نمونه‌های مختلف پس از آماده‌سازی به مقدار 1 میکرولیتر به دستگاه تزریق شد تا نوع ترکیب‌های تشکیل‌دهندة آن مشخص شود. پس از جداسازی، درصد اجزای تشکیل‌دهندة اسانس با شاخص بازداری محاسبه شد؛ درنهایت، ترکیبات پیشنهادی از کتابخانه رایانه متصل به دستگاه در فایل‌های مجزا، دریافت و مقایسه آنها با ترکیب‌های استاندارد از منابع معتبر انجام شد (Adams, 1995; NIST Webbook).

مشخصات و ویژگی دستگاه‌های استفاده‌شده

دستگاه کروماتوگرافی گازی با آشکارساز طیف‌سنجی، ساخت شرکت Agilent آمریکا با مشخصات فنی  Agilent 7890B Series GC و Agilent 5977 Series MSD بوده که قابلیت تزریق نمونه‌های مایع با توانایی رقیق‌سازی Split/Splitless Inlet و همچنین قابلیت شناسایی کیفی و کمّی با آشکارساز طیف‌سنج جرمی (MSD) را دارد. این آشکارساز مجهز به سیستم یونیزاسیون از نوع EL بوده و آنالایزر آن از نوع Single Quadrupole است. همچنین برای دستیابی به حساسیت بالا، دتکتور آن از نوع Triple-Axis Detector (EMP) است که Noise و Drift بسیار پایین دارد. ستون دستگاه نیز به طول 30 متر و قطر داخلی 25/0 میلی‌متر و ضخامت لایه 25/0 میکرومتر از نوع HP-5MS است. در این روش نوع و میزان هریک از ترکیبات سازنده اسانس با مقایسه طیف جرمی هریک از ترکیبات سازنده اسانس با طیف جرمی ترکیبات موجود در بایگانی عظیم دستگاه MS-GC و تجزیه و تحلیل پیک‌های مختلف در کروماتوگرام‌ها مشخص می‌شود (Farmanpour Kalalagh et al., 2023).

 

نتایج و بحث

بازده اسانس

در این مطالعه بازده اسانس برای توده‌های اراک، ملایر، جهرم، جلفا و کاشمر در جدول 2 آورده شده است. همان‌طور که مشخص است بازده‌ اسانس توده‌ها از 06/0 درصد تا 34/0 درصد متغیر است. بیشترین بازده اسانس مربوط به توده کاشمر و کمترین بازده اسانس مربوط به توده اراک بود و بازده اسانس سایر توده‌ها بین مقادیر بیشینه و کمینه ذکرشده قرار دارد.

 

کیفیت و کمّیت ترکیبات اسانس

نتایج آنالیز ترکیبات اسانس 5 توده شوید در جدول 2 نشان دادند بین توده‌های ارزیابی‌شده ازلحاظ میزان و نوع ترکیبات، تفاوت وجود دارد. در مجموع برای پنج توده مختلف، 71 ترکیب شناسایی شد که 26، 34، 26، 42 و 37 ترکیب به‌ترتیب در توده‌های اراک، ملایر، جهرم، جلفا و کاشمر تولید شدند. از بین 71 ترکیب تولیدشده، بیشترین مقدار (591/0 درصد) مربوط به ترکیب Santolina triene در توده جهرم و کمترین مقدار (016/0 درصد) مربوط به ترکیب Cineole در توده ملایر بود. از 71 ترکیب شناسایی‌شده، 13 ترکیب در هر 5 توده مشاهده شدند که از بین آنها Dihydrocarvone، trans-Dihydrocarvone، Carvone، Elemicin و Apiol ترکیبات غالب این توده هستند. در این بین برخی ترکیبات مانند Santolina triene و Menthol با میزان بالایی فقط در توده جهرم و در توده ملایر مشاهده شدند. با بررسی هریک از توده‌ها، در توده‌ اراک ترکیب Carvone و Methyldimethoxysilane به‌ترتیب بیشترین (201/0 درصد) و کمترین مقدار (017/0 درصد) را به خود اختصاص دادند. همانند توده‌ اراک، ترکیب Carvone در توده ملایر بیشترین مقدار (268/0 درصد) را داشت؛ اما کمترین مقدار در این توده (016/0 درصد) مربوط به ترکیب Cineole شناسایی شد. در توده جهرم ترکیب Santolina triene با مقدار 591/0 درصد و Dihydrocarveol با مقدار 034/0 درصد از میان ترکیبات به‌ترتیب حداکثر و حداقل مقادیر را به خود اختصاص دادند. ترکیب‌های Carvone و Apiol نیز به‌ترتیب در توده‌های جلفا (244/0 درصد) و کاشمر (166/0 درصد) بیشترین مقدار را نشان دادند و کمترین مقدار با میزان مشابه 026/0 درصد به‌ترتیب در تودهای ذکرشده مربوط به ترکیب‌های Eicosane و Heneicosane بودند.

بازده اسانس علاوه بر عوامل محیطی، ممکن است با توجه به اندام‌ها و نوع ژنتیک گیاه متغیر باشد. در این راستا طبق مطالعه‌ سفیدکن (Sefidkon, 2001) در بررسی اسانس شوید ایران، بازده اسانس در اندام‌های مختلف شوید متغیر بوده و در سرشاخه گل‌دار 21/0 درصد و در بذر 42/2 درصد است. در نتیجه‌گیری حاصل از گزارش ذکرشده، میزان اسانس در شرایط آب‌و‌هوایی مذکور و در شرایط آب‌وهوایی کشور ایران زیاد نیست که با نتایج حاصل از این مطالعه مطابقت دارد. ‌همچنین در بررسی تأثیر ژنتیک گیاهی بر بازده اسانس، مطالعه‌ روی اسانس اکوتیپ‌های شوید نشان‌دهندة متغیربودن میزان اسانس در اکوتیپ‌های مختلف است که میزان آن از 22/0 درصد تا 46/0 درصد متفاوت است (Mohebodini & Farmanpour-Kalalagh, 2021) و با نتایج حاصل از این مطالعه در متغیربودن میزان اسانس در توده‌های مختلف هم‌خوانی دارد.

در توده‌های مطالعه‌شدة شوید، 13 ترکیب α-Phellandrene، D-Limonene، Limonene، p-Cymenene، Carvone، Dihydrocarvone، trans-Dihydrocarvone، Dihydrocarveol، Piperitenone oxide، Myristicin، Elemicin، Apiol و Oleic acid در تمامی توده‌ها با مقادیر مختلف تولید شدند (شکل 3). از بین این 13 ترکیب، 8 ترکیب ابتدایی مونوترپنوئید‌های حلقه‌ای و Piperitenone oxide مونوترپنوئید کتونی بوده که از مسیر متیل‌اریتریتول فسفات (MEP) در پلاستید بیوسنتز می‌شوند. Myristicin، Elemicin و Apiol فنیل‌پروپانوئید بوده که Myristicin و Elemicin از مسیر شیکمیک‌اسید بیوسنتز شده‌اند و Oleic acid نیز به‌عنوان یک اسیدچرب اشباع‌نشده مونو، از استیل‌کوآنزیم‌آ و با شرکت‌داشتن انواع مختلفی از آنزیم‌ها بیوسنتز می‌شود.

α-Phellandrene یک مونوترپن حلقه‌ای بوده که از مسیر متیل‌اریتریتول فسفات (MEP) در پلاستید بیوسنتز شده است و تاکنون اثرات ضدقارچی (Zhang et al., 2017)، ضدالتهاب (Siqueira et al., 2016)، ترمیم زخم (de Christo Scherer et al., 2019)، تعدیل آسیب بافتی، تنش اکسیداتیو و سطح TNF-α (Gonçalves et al., 2020) برای آن گزارش شده است. در مطالعات مختلف نیز این ترکیب در اندام‌های مختلف (Sefidkon, 2001) و در توده‌های مختلف ایرانی (Mohebodini & Farmanpour-Kalalagh, 2021) و استونی (Vokk et al., 2011) به‌صورت ثابت اما با میزان متغیر تولید شده است. Limonene و ایزومر آن یعنی D-Limonene تولیدشده در این توده‌ها دارای اثرات ضدسرطان، تجزیه سنگ صفرا، تسکین دل درد (Sun, 2007)، ضدالتهاب، آنتی‌اکسیدان، ضددرد، ضددیابت، ضدویروس، محافظت از گوارش (Vieira et al., 2018)، رفع اختلالات عصبی (Tang et al., 2019) و فعالیت‌های ضدکاتابولیکی و پروآنابولیکی (Rufino et al., 2015) هستند. علاوه بر اثرات دارویی، این ترکیب در صنایع غذایی، آرایشی - بهداشتی و سایر صنایع استفاده می‌شوند. همچنین به‌عنوان ضدحشره کاربردهای فراوانی دارد (Karr & Coats, 1988). در بررسی‌ها و مطالعات ذکرشده نیز ترکیب‌های Limonene و D-Limonene در اندام‌ها و گونه‌های مختلف به‌صورت ثابت با مقادیر متفاوت تولید شده‌اند که با نتایج حاصل از این مطالعه مطابقت دارد.

p-Cymenene تولیدشده در توده‌‌های جلفا و کاشمر با میزان مشابه 067/0 درصد تولید شد. در توده‌های ملایر و جهرم این میزان تا حدودی نزدیک به هم و در توده اراک با مقدار کمتری تولید شد. در مطالعه ویسانی و همکاران (Weisany et al., 2015) نیز این ترکیب از 01/0 تا 72/0 درصد تولید شد که با نتایج حاصل از این مطالعه در ثابت‌بودن تولید این ترکیب با مقادیر متفاوت در توده‌های مختلف هم‌خوانی دارد. در تولید سه ترکیب Carvone، Dihydrocarvone و trans-Dihydrocarvone، میزان تولید Carvone در اکثر توده‌ها بیشتر از بقیه است. این ترکیب بیشتر در صنایع غذایی و لبنی کاربرد دارد و علاوه بر آن چندین کاربرد Carvone به‌عنوان عطر و طعم‌دهنده‌، مهار جوانه‌زنی سیب‌زمینی همراه با ارتباط آن درزمینة پزشکی ازجمله ضدمیکروب (de Carvalho et al., 2006)، ضدسرطان (Islam, 2019) و تنظیم‌کنندة سیستم ایمنی (Raphael & Kuttan, 2003) علاقه به این مونوترپن را توجیه می‌کند. نتایج این مطالعه با بررسی گزارش‌های Vokk و همکاران (2011) در ارتباط با تولید این ترکیب به‌صورت ثابت در توده‌های مختلف مطابقت دارد. Dihydrocarveol که مشتق دی‌هیدروی کاروول بوده و یک مونوترپنوئید p-Menthane است، به‌عنوان کنه‌کش و همچنین مواد معطر در صنایع استفاده می‌شود (Bhatia et al., 2008). این ترکیب در توده‌ کاشمر با بیشترین مقدار (112/0 درصد) نسبت به بقیه توده‌ها تولید شده است؛ اما برخلاف ترکیب قبلی، Piperitenone oxide در توده جهرم بیشترین مقدار را داشت (068/0 درصد) و در بقیه توده‌ها تا حدودی نزدیک به هم است. نقش این ترکیب به‌صورت سمی، دفع‌کننده و بازدارندة تولیدمثل ناقلین مالاریا ثابت شده است (Tripathi et al., 2004).

سه ترکیب Myristicin، Elemicin و Apiol ازلحاظ ساختاری و بیوسنتزی متفاوت از ترکیب‌های ذکرشدة قبلی بوده و جزء فنیل‌پروپانوئید‌ها هستند. میزان این سه ترکیب به‌ترتیب در توده‌های جهرم (071/0 درصد)، کاشمر (149/0 درصد) و اراک (185/0 درصد) بیشتر از بقیه‌ توده‌ها است. برای Myristicin تاکنون اثرات ضدالتهابی (Lee & Park, 2011)، ضدالتهاب روده (Badr et al., 2020) و محافظت در برابر آپوپتوز (Zhao et al., 2017) گزارش شده است. ازنظر ساختاری، Elemicin مشابه Myristicin است و فقط با گروه متیل میریستیسین متفاوت است که به دو اتم اکسیژن متصل می‌شود. خواص ضدمیکروبی، ضدقارچی و ضدویروس هرپس‌سیمپلکس (Sajjadi et al., 2012) از اثرات دارویی این ترکیب است. برای Apiol نیز بازدارندگی تولید آفلاتوکسین در قارچ Aspergillus parasiticus (Razzaghi-Abyaneh et al., 2007) گزارش شده است که ممکن است این ترکیب ازلحاظ دارویی نیز مفید باشد؛ اما نیازمند تحقیقات بیشتری است؛ بنابراین، در مصرف این دو ترکیب باید احتیاط لازم، لحاظ و زیرنظر متخصص انجام شود. در مطالعه وک و همکاران (Vokk et al., 2011) و همچنین در مطالعه اوزل و چینار (Özel & Çinar, 2021)، Myristicin و Elemicin به‌طور ثابت با مقادیر متفاوت تولید شده‌اند که با نتایج حاصل از این تحقیق مطابقت دارد. مطالعه اجزای شیمیایی اسانس‌ها و فعالیت‌های بیولوژیکی عصاره آبی گیاه شوید کشت‌شده در شرایط ارگانیک و غیرارگانیک نیز حاکی از آن بود که ترکیب Apiol نیز همانند این مطالعه، به‌طور ثابت اما با مقادیر متفاوت تولید می‌شود (Ozliman et al., 2021). ترکیب نهایی که در تمامی توده‌های اراک، ملایر، جهرم، جلفا و کاشمر تولید شد، اسید چرب اشباع‌نشدة مونو بنام Oleic acid است. در مطالعاتی که روی اسانس شوید صورت گرفته است، تاکنون تولید Oleic acid در تمامی توده‌ها گزارش نشده است که در این مطالعه تولید این اسید چرب در تمامی توده‌های مطالعه‌شده برای اولین‌بار گزارش می‌شود.

علاوه بر 13 ترکیبی که در تمامی توده‌ها با مقادیر متفاوت تولید شدند، تعدادی از سایر ترکیبات نیز در بعضی از توده‌ها تولید شده‌اند و در بعضی دیگر تولید نشده‌اند که هرکدام از آنها در صنایع مختلف داروسازی، آرایشی - بهداشتی و غذایی کاربرد فراوانی دارند. تولید این ترکیبات با تنوع در نوع و میزان آنها نشان‌دهندة تنوع فیتوشیمیایی موجود در توده‌ها بر پایه اسانس است.

نتیجه‌گیری 

با توجه به اینکه توده‌های مطالعه‌شده از نقاط مختلف کشور، جمع‌آوری و در یک شرایط اقلیمی کشت شده‌اند، تنوع فیتوشیمیایی توده‌‌ها بر پایه اسانس، تفاوت زیادی را ازلحاظ عملکرد اسانس (06/0 تا 34/0 درصد) و ترکیبات تشکیل‌دهندة آن در توده‌های مختلف (از 26 تا 42 ترکیب) نشان داد. در تمامی توده‌ها، 13 ترکیب به‌صورت یکسان اما با مقادیر متفاوت در هر پنج توده تولید شدند که از بین آنها ترکیبات Dihydrocarvone، trans-Dihydrocarvone، Carvone، Elemicin و Apiol ترکیبات غالب این توده‌ها بودند. این نتایج را می‌توان ناشی از توانمندی ژنتیکی توده‌های بررسی‌شده در شرایط اقلیمی محل کشت دانست. این توانمندی ژنتیکی منجر به تولید ترکیبات متنوع مونوترپنوئیدی، فنیل‌پروپانوئیدی و غیره شده است؛ بنابراین، اطلاعات حاصل از این مطالعه می‌تواند در معرفی توده‌‌ها برای استخراج و استحصال ترکیبات در صنایع غذایی و دارویی مفید و مؤثر باشد.
