چکیده | ||
Background: Due to special diets including vegetarianism and problems caused by high cholesterol of milk and lactose intolerance in some people, the demand for non-dairy probiotic products has increased. In the current research, the presence of Lactobacillus plantarum in apple, pear, and quince vinegar was investigated by using molecular and biochemical methods. Methods: After the isolation of microorganisms, their probiotic properties such as their ability to grow in different bile salt concentrations and pH were examined. Biochemical characteristics of bacteria including fermentation of sugars, presence of the extracellular enzyme, and antibiotic sensitivity were studied. Molecular identification of strains was performed by the specific L. plantarum recA (Recombinase A) primer which translate recA protein that is an active protein that has multiple functions in a bacterial cell. Results: Out of the 24 microorganisms isolated from apple, pear, and quince vinegar, nine strains formed a specific band by specific primers. These gram-positive bacteria were lipase and protease positive, and catalase, amylase, gelatinase, and oxidase negative. Except for xylose, the other tested sugars were fermented by L. plantarum bacteria. These strains grew fairly well in acidic and bile environments as well as high temperatures and salt concentrations. Out of the 15 antibiotics tested, the bacteria were resistant to eight antibiotics and showed relative sensitivity to three. The bacteria had anti-proliferative effects on human cancer cell line HT-29, demonstrating their potential as anticancer agents. Conclusion: It was possible to isolate from apple, pear, and quince vinegar the L. plantarum with potential for use as probiotics and possessing anticancer properties. | ||
